Drink Drawing Promotion Our good friend Patrick Henry of Patrick Henry Creative Promotions in Houston suggests this one to hold happy-hour crowds.

Have everyone in the crowd take out a dollar bill and write his name on it in very small letters in the upper left corner. Collect the dollars in a large hurricane glass or snifter, then display the glass in a highly visible and secure location in your club. If your happy hour is over at 8 p.m., announce that you’ll draw for a winner at 8:45 p.m.

The person’s name on the bill drawn will win the entire amount in the glass. Your cost: Zero!

Redo The Drink Menu Have your bartenders mix three new cocktails. Post the ingredients on the back bar and run specials on these three all night. Have your cocktail waitresses walk around with smaller samples for guests to try, while collecting suggestions for the names of the new cocktails. At the end of the night, take a vote on which one should be added permanently to the existing drink list. You know at the very least, the person whose suggestion was chosen is sure to become a repeat customer.
